If you love donuts, you must know there are basically two types of donuts: yeast donuts and cake donuts.

YEAST donuts are made with a yeasted dough that typically rises when kept aside for around 1 hour before the donuts can be fried. These donuts are super light and airy in texture.

CAKE donuts, on the other hand, don't contain yeast. rather, baking powder and/or baking soda are used to make the dough, as this does not need to rise before frying. Cake donuts have a cake like taste and texture after frying. There are a ton of different types and flavors of cake donuts.

EQUIPMENTS FOR FRYING DONUTS: To fry any kind of donut, I recommend having:

1. DONUT CUTTER or circle cuter of different sizes, to cut your donut and the donut hole.
2. HEAVY BOTTOMED POT helps the frying oil heat more evenly, resulting in evenly frying of                donuts.
3. WIRE SPIDER helps you turn the donuts in the oil and remove them when they are done.
4. PAPER TOWELS helps drain the donut of excess oil after frying.

MAKING THE RECEPIE: 
  • To make the dough, mix butter and sugar together with the help of electric mixer. Add curd or egg and vanilla until combined. 
  • In a separate bowl, add flour, baking powder, baking soda, a pinch of salt.  In a measuring cup add milk and the sour cream.
  • Now alternately add the dry and wet ingredients to the butter mixture, to get a soft workable dough.
  • Get your dough on a floured surface, dust the dough lightly with flour and knead it for a minute or two.
  • Roll the dough at a thickness of 1/3 inch and use your cutter to cut the donut shape. Re-roll the dough scrap. While cutting the dough. start heating the oil on a medium low flame.
  • Carefully add one or two donuts at a time into the oil. cook for about 2 minutes per side. Use the spider to carefully to remove the cooked donuts. Let the excess oil drip back into the pot.
  • Once your donuts are cooked, let them cool for some time. and then you can top them as you like.

DIFFERENT COATINGS-

CINNAMON SUGAR: Whisk together the granulated sugar and sugar in a shallow bowl. While the donuts are still warm, coat them with cinnamon sugar.

VANILLA OR CHOCOLATE GLAZE: Prepare the glaze of your choice, dip the tops of the donut in the glaze after they cool down completely. Place them on butter paper to allow excess glaze to drip off.

POWDERED SUGAR: Let donuts cool completely, place powdered sugar in a shallow bowl ad coat each donut in the powdered sugar.
